Abstract
In this paper, dependence of viscosity (η) is evaluated with respect to temperature (20 ºC - 80 ºC), and degrees brix (0.2 - 0.6), for mucilage prickly pear (Opuntia spinulifera). The maximum value of η20ºC was 10915 cSt at 0.6 ºBx of mucilage. The results show, the variation of the viscosity on soluble solids (ºBx) for each temperature studied. The mucilage showed non-newtonian behavior.
